The Iririki Food & Beverage Academy is a 12-week hands-on training programme designed to help local talent build practical skills, confidence and career pathways in hospitality.

Based at Iririki Island Resort & Spa, the academy gives students real-world experience across food and beverage service or kitchen operations, supported by experienced hospitality professionals.

Developing local talent for hospitality excellence

Hospitality is one of Vanuatu’s most important industries, and Iririki is proud to play a role in developing the next generation of local hospitality professionals.

This programme has been created for motivated students who want to learn in a real resort environment, gain practical experience, and take the first step towards a future career in hospitality.

Graduates of the Iririki Food & Beverage Academy have a very high chance of employment at Iririki, with the resort regularly recruiting from its intern programmes.

Students will be selected for one of two training pathways: Front of House Food & Beverage Service or Back of House Kitchen Operations.

Front of House Program

Food & Beverage Service

This pathway is designed for students interested in guest service, restaurant operations and beverage service.

Training schedule:

Week 1–2: Iririki induction and introduction to hospitality
Week 3–4: Service fundamentals
Week 5–6: Beverage service
Week 7–8: Guest experience
Week 9–10: Advanced service
Week 11–12: Assessment

 

Back of House Program

Kitchen Operations

This pathway is designed for students interested in kitchen operations, food preparation and working as part of a professional culinary team.

Training schedule:

Week 1–2: Kitchen induction
Week 3–4: Basic preparation
Week 5–6: Hot kitchen
Week 7–8: Cold kitchen / pastry
Week 9–10: Service
Week 11–12: Assessment

What’s included

The academy is designed to give students practical experience and structured support throughout the 12-week programme.

Students receive:

  • Practical, hands-on hospitality training
  • A department mentor
  • Weekly progress reviews
  • Structured competency checklists
  • Practical demonstrations and service-based assessments
  • A Certificate of Completion issued by Iririki Island Resort & Spa
  • Uniforms and meals
  • Transport or a travel allowance

The programme is 90% practical and 10% theory, helping students learn by doing in a real hospitality environment.

Programme details

Duration: 12 weeks / 3 months
Commitment: 36 hours per week, including weekends
Placements: Maximum 16 students
Pathways: 8 Front of House students and 8 Back of House students
Training: 90% practical, 10% theory
Certificate: Issued by Iririki Island Resort & Spa on completion

Training takes place in a purpose-built training classroom and within Iririki’s hospitality operations, giving students the chance to build both knowledge and workplace confidence.

Who can apply?

Applicants should be motivated, reliable and genuinely interested in building a future in hospitality.

Entry criteria

To apply, students must have:

  • A minimum age of 16 years
  • A fantastic attitude and willingness to learn
  • Demonstrated interest in hospitality
  • Great presentation and personal hygiene
  • A good command of English
  • Commitment to 36 hours per week, including weekends

Training, support and governance

The Iririki Food & Beverage Academy is managed by the F&B leadership team and supported by HR for induction, recruitment and coordination.

The programme is aligned with Iririki’s operational standards and is subject to continuous improvement and review.

Students are supported throughout the programme with mentoring, supervision, progress reviews and practical assessments.
